Five racks are included to fit in the cavity, and they are adjustable on the 13 rack guides. Because this oven has interior lights and glass panels in both doors, employees can monitor product as it bakes, ensuring it does not overcook. Insulation fills the cabinet's sides, and because heat rises, extra insulation on top helps keep hot air from escaping the cabinet.Designed to cook food at temperatures between 200 and 500 degrees Fahrenheit, this Duke E101-G natural gas convection oven has a thermostat that maintains the desired setting, so food cooks consistently across batches.
